The texture of this dish is just like rice and it makes a great alternative for those avoiding grains. It's also perfect for sneaking more veggies into your family meals.
Serve with an Asian-inspired meal instead of rice or noodles.
Ingredients
1 medium head cauliflower
1 Tbsp. coconut oil
½ cups chopped yellow onion
2 cloves garlic, minced
1 Tbsp. Argyle Street Stir Fry Mix
1 Tbsp. rice vinegar
1 tsp. sesame oil
Salt & pepper, to taste

Cut cauliflower into florets. Place florets in a food processor and pulse until the texture resembles rice, about 15 to 20 pulses. If you dont have food processor, alternatively, grate the cauliflower into a bowl using a hand grater.

Heat coconut oil in a large skillet over medium heat. Add onion and garlic, and saute for 2 to 3 min., or until fragrant.

Stir in Argyle Street Stir Fry Mix, rice vinegar, sesame oil, cauliflower, and salt & pepper to taste. Cook for 6 to 8 min., or until cauliflower is cooked through but still firm.

Remove from heat and serve. Enjoy! ❤️
