Shake up pizza night with this colorful mashup of fajitas and pizza. This pizza quick and easy to prepare using good quality, store-bought pizza crusts.
If you’re a pizza lover and don’t have a holiday night pizza ritual, we highly recommend it. It’s a great way to celebrate the start of the weekend! Or comfort you after a taxing week.
Ingredient
For sauce:
1 Tbsp olive oil
2 garlic cloves, minced
1 Tbsp tomato paste
1 cup tomato puree
2 Tbsp Ultimate Fajita Seasoning
For veggies:
2 Tbsp olive oil
1 cup sliced red, orange, and green bell pepper
1/3 cup sliced red onion
Salt & Pepper to season
To assemble:
1 lb pizza dough
1/4 lb cooked, shredded chicken
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
Chopped cilantro, to garnish

Make sauce: In a medium pot, heat oil over medium-high heat. Add garlic and sauté until fragrant. Stir in tomato paste and cook for 1 min. Add tomato puree and Ultimate Fajita Seasoning. Bring mixture to a simmer. Cook for 10 min., stirring occasionally, then remove from heat and set aside.

Sauté veggies: In a large pan, heat oil over medium-high heat. Add bell peppers and onion. Sauté for 4 to 5 min. until onions are translucent. Season with Salt & Pepper. Remove from heat and set aside.

Assemble pizza: Preheat oven to 400F/200C degrees (Preheat pizza stone in oven for 1 hour for best results). In rectangular baking tray coated with cooking spray, unroll dough into the tray with 1-in thickness. Flatten dough and build up edges slightly.
Add 1/4 cup of sauce to center of pizza and spread evenly, leaving a 1-inch border. Sprinkle with chicken, cheddar and mozzarella cheeses, and bell pepper and onion mixture. Carefully transfer parchment and pizza to pizza stone. Bake for 20 min. until crust is crisp and golden. Garnish with cilantro, slice, and serve. Enjoy! ❤️
