Tilapia is packed with vitamins and a good source of omega-3 fatty acids. Baking them in the oven is quick, and healthy for your busy weeknights!
To round out the meal, serve with rice or roasted veggies or potatoes alongside. It's the perfect way to complement the light fish.
Ingredient
3 tilapia filets (or any white fish)
2 cups cherry tomatoes
4 garlic cloves, sliced
1/4 tsp. salt, divided
1 tsp. Sinjari Fish Blend, divided
1 Tbsp. extra virgin olive oil
1/4 tsp. crushed red chili pepper flakes
1 lemon juice and zest
1 Tbsp. chopped fresh basil or parsley, for garnish
Instruction
1
Preheat oven to 400°F/200ºC. Pat the fish fillets dry with paper towels.
2
In an oven-safe dish, place the cherry tomatoes, garlic, salt, half the lemon zest, half the lemon juice, and Sinjari Fish Blend. Pour the olive oil on top and toss until well combined.
3
Place the tilapia fillets in the middle of the baking dish. Add the remaining Sinjari Fish Blend, lemon zest, lemon juice, salt, and crushed red pepper flakes on top of the tilapia fillets. Drizzle with olive oil.
4
Bake in the preheated oven for 25 minutes, until the tomatoes soften and the tilapia is cooked through.
5
Sprinkle the baked tilapia fillets with fresh basil leaves and serve the baked tilapia and cherry tomatoes with a side of your choice. Enjoy! ❤️
