This fun twist on a classic Potato Salad will be a hit anywhere it’s served. And there is nothing like this salad served alongside grilled steak!
You can add your favorite toasted nuts to this salad like walnuts or almonds. Another great garnish is freshly chopped parsley.
Ingredient
8 cups water
3 lb. red potatoes, diced
1 pound sour cream
2 Tbsp. Ranch Dressing & Dip Mix
1 medium red onion, diced
3 stalks celery, diced
1 bell pepper, diced

Instruction

In a small stock pot, bring water to a boil, add salt. Add the diced potatoes and simmer until fork tender. Run under cold water, or place in an ice bath until the potatoes are chilled. Drain.

Mix the sour cream and Ranch Dressing & Dip Mix.

Transfer the potatoes to a large bowl, add the onion, celery, bell pepper, and sour cream mixture. Mix until evenly coated. Enjoy! ❤️
