Use about 1 tsp. of Spicy Madras Curry per pound of beef, chicken, fish, or poultry. Curry can be used in so many dishes including rice, sauces, chicken or seafood salads, vegetables, and soups. Pairs well with lentils and beans.

◎ Mulligatawny Soup:
In a pot, sauté 1 chopped onion, 2 diced carrots, and 2 diced celery stalks in 1 tbsp of vegetable oil. Add 2 minced garlic cloves and 1-2 tsp of Spicy Madras Curry. Pour in 4 cups of vegetable or chicken broth, 1 cup of red lentils, and a can of diced tomatoes.
